I love the Super Bowl – not that I'm a diehard football fan – but for the halftime show, the commercials, and the beautiful buffet of delicious snacks. My go-to contribution is also the easiest recipe I know. This buffalo chicken dip takes 20 minutes to make, and almost 2 minutes to disappear.
ingredients
• 1 package light cream cheese or neufchatel
• 2 C shredded chicken (tip: cut cooked chicken breast into halves, place in mixer with paddle attachment and in about 10 seconds you have perfectly shredded chicken!).
• 1/2 C Frank's Red Hot Sauce
• 1/2 low fat blue cheese dressing
• 1/2 C blue cheese crumbles
place all ingredients in shallow pyrex dish, mix together until blended. Bake at 350º for 20 minutes and serve with veggies and tortilla chips.
