Blast From the Past: Spiced Pumpkin Bread

I love the holiday season for so many reasons ... one of my favorites is baking delicious, festive treats for friends and loved ones. I've been making this tasty recipe for spiced pumpkin bread for years now ... it's really easy and always a big hit! Wrap it up in foil and a cute wrap like this and it makes great gifts for holiday parties!

Spiced Pumpkin Bread

ingredients:
3 cups sugar
1 cup vegetable oil
3 large eggs
1 16 oz. can solid packed pumpkin
3 cups flour
1 tsp. ground cinnamon **
1 tsp. ground cloves
1 tsp. ground nutmeg
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1 cup chopped walnuts (optional)

** I like to use heaping teaspoons of each spice for a little extra holiday spirit!

Preheat oven to 350ºF. Butter and flour two 9x5x3" loaf pans**  Beat sugar and oil in large bowl to blend. Mix in eggs and pumpkin. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl. Stir into pumpkin mixture. Mix in walnuts, if desired.
Divide batter evenly between the two prepared pans. Bake until toothpick comes out clean, about 1 hour 10 minutes. Cool 10 minutes, then turn loaves out onto racks to cool completely.

** I found Pillsbury Baking Spray with flour on sale at my grocery store and thought I'd give it a try ... it works like a charm! The loaves slid right out just by turning the pans over.
